Owners of a property in Carbondale, Illinois have proposed a food truck court featuring three food trucks, indoor seating, a bar, a commissary and a restroom. If the plan is successful, the owners would construct a larger commissary and a fourth food truck or trailer in the courtyard. The commissary would be used for food preparation, but not for cooking, according to a report by Aspen Daily News.
« While individual food trucks have occupied various temporary locations in Carbondale, this would provide a permanent location for up to three full-sized (food trucks) and one small food/vendor truck in a food truck court, » the application said. « The commissary area provides safe food preparation space for area vendors. »
The town would need to approve several aspects of the project, including a rezoning of the lot.
