Cousins Maine Lobster, a QSR restaurant and food truck chain, plans to expand into Chicago with two restaurants and five food trucks, with the first truck opening in early 2024. The trucks will offer Maine lobster rolls, lobster grilled cheese, lobster tacos and New England Clam Chowder, according to a report by NCB 5 Chicago.
The company first gained popularity after appearing on ABC’s Shark Tank. It opened its first food truck in 2012 and since has expanded to more than 20 states with food trucks and restaurants.
