The Taqueria La Princess Mobile Unit in Knoxville received a passing grade of 71, while a score of 69 and below is considered failing. The inspector found inconsistent date marking in the unit, which is required for all ready-to-eat-food, according to a report by WATE.
According to the inspector, employees at the unit were not washing their hands. The inspector also found a blender with visible food debris stuck to it.
In addition, the temperature of the pulled pork on the skillet was measured at 110 degrees, which is below 135-degrees minimum to kill bacteria. Beans in the cooler were at 52 degrees, falling short of the safe cool temperature of 41 degrees and below to slow bacteria growth.
