Blaine Baggao, a restaurateur, plans to open a food truck park called MoonRise Garden Bar in Wheat Ridge, Colorado. The location will hold up to four food trucks including Baggao’s Filipino and Mexican food truck Adobo, according to a report by The Denver Post.
« It’s really the best of the best coming together, the Justice League of food trucks, » Baggao said in the report. It will have both permanent and rotating trucks.
The location was previously a gas station property. Baggao chose the name MoonRise for his 8-year old daughter Olivia, who he said was like the moonlight in a dark night for him during a difficult time in his life.
« I wanted to have something I could show her that I had (her) in mind the whole time, » he said.
